Stuffed Enchilada Peppers

Serves: 8

//Ingredients//

• 4-5 Bell Peppers (any color) sliced in half stem-to-tip, seeds removed
• 1pound of hamburger meat (ground turkey), cook
• 1medium onion, diced
• 1 (15oz) black beans, drained and rinsed
• 1 (4oz) can diced green chiles (don't drain)
• 1tomato, diced
• 1/2c chopped cilantro
• 1 1/2c Spanish rice, cooked
• 1/4tsp salt
• 1/4tsp pepper
• 2 1/2c Mexican blend cheese, grated
• 1 (28oz) can enchilada sauce (green or red)

//Instructions//

1. Add meat and onion to large saucepan. Cook and drain.
2. Mix, everything in a large bowl NOT cheese. Leave a little bit of sauce to pour over top at the end.
3. Stuff peppers with mixture in a 9x13" baking dish
4. Sprinkle cheese and pour left over sauce.
5. Cover pan with foil and Bake at 375 for
25-30 minutes.
